Pumpkin Waffles

Ingredients

  • 2 cups blanched almond flour
  • 1/4 cup + 2 tablespoons arrowroot starch
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/3 cup pumpkin puree
  • 1/3 cup water
  • 1/3 cup maple syrup
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • avocado oil spray as needed for waffle iron

Preparation

  1. Preheat your waffle iron. In a large mixing bowl, whisk together the dry ingredients

  2. Add the wet ingredients. Whisk well to incorporate until smooth

  3. Grease the waffle iron well with avocado oil spray. Pour 1/2 cup of the batter into the center of the waffle iron and close

  4. Serve warm w/ your fave toppings. Leftovers can be stored in the refrigerator for up to 4 days or in the freezer for up to 2 months
