Purple Sweet Potato for Breakfast

Ingredients

  • dded 2 cups of cashew milk
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1/2 tsp of vanilla extract
  • 1 flax egg to it and whisked it up. I wanted to intensify the purple so I added 1/2 cup of black currant flour to it and mixed well
  • I added 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1 Tbs of erythritol
  • 1 Tbs of melted coconut oil
  • 2 eggs to the mixture

Preparation

  1. But it all turned black! And when I tried to make the pancakes, I was looking at some kind of black tarry bubbly liquid in my pan

  2. So I decided to make a cake from the mixture instead

  3. After everything was combined I baked it at 170 degrees C for 50 minutes, hoping something palatable will come out of it

  4. Luckily it turned out well

  5. I served it with some date syrup @meridianfoods, coconut flakes @wholefoodsmarketuk, bananas and almonds

  6. I really enjoyed it, even though it did not turn out purple
