Purple Sweet Potato for Breakfast
Ingredients
- dded 2 cups of cashew milk
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1/2 tsp of vanilla extract
- 1 flax egg to it and whisked it up. I wanted to intensify the purple so I added 1/2 cup of black currant flour to it and mixed well
- I added 1 tsp of baking powder
- 1 tsp of baking soda
- 1 Tbs of erythritol
- 1 Tbs of melted coconut oil
- 2 eggs to the mixture
Preparation
But it all turned black! And when I tried to make the pancakes, I was looking at some kind of black tarry bubbly liquid in my pan
So I decided to make a cake from the mixture instead
After everything was combined I baked it at 170 degrees C for 50 minutes, hoping something palatable will come out of it
Luckily it turned out well
I served it with some date syrup @meridianfoods, coconut flakes @wholefoodsmarketuk, bananas and almonds
I really enjoyed it, even though it did not turn out purple
