Vegan Egg Salad Sandwich

Ingredients

  • 2 pieces of ezekiel bread
  • 1 serving extra firm tofu
  • 1.5 tablespoons vegan mayo
  • 1 teaspoon yellow mustard
  • 1 tablespoon turmeric
  • 1/4 cup diced onion
  • 2 teaspoons himalayan pink salt
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 2-3 tablespoons nutritional yeast
  • 1/4 avocado
  • 1 handful arugula
  • 1/3 tomato
  • a couple of slices vegan mozzarella

Preparation

  1. Toast two pieces of ezekiel bread

  2. Chop 1 serving of extra firm tofu into 2 cm cubes

  3. In a bowl with the tofu, combine 1.5 tablespoons vegan mayo, 1 teaspoon yellow mustard, 1 tablespoon turmeric, 1/4 cup diced onion, 2 teaspoons himalayan pink salt, 2 teaspoons black pepper, 1 teaspoon garlic powder, and 2-3 tablespoons nutritional yeast

  4. Combine the mixture and add it to one half of the sandwich

  5. Load up the sandwich with 1/4 avocado, 1 handful of arugula, 1/3 tomato, and a couple of slices of vegan mozzarella
