Vegan Egg Salad Sandwich
Ingredients
- 2 pieces of ezekiel bread
- 1 serving extra firm tofu
- 1.5 tablespoons vegan mayo
- 1 teaspoon yellow mustard
- 1 tablespoon turmeric
- 1/4 cup diced onion
- 2 teaspoons himalayan pink salt
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 2-3 tablespoons nutritional yeast
- 1/4 avocado
- 1 handful arugula
- 1/3 tomato
- a couple of slices vegan mozzarella
Preparation
Toast two pieces of ezekiel bread
Chop 1 serving of extra firm tofu into 2 cm cubes
In a bowl with the tofu, combine 1.5 tablespoons vegan mayo, 1 teaspoon yellow mustard, 1 tablespoon turmeric, 1/4 cup diced onion, 2 teaspoons himalayan pink salt, 2 teaspoons black pepper, 1 teaspoon garlic powder, and 2-3 tablespoons nutritional yeast
Combine the mixture and add it to one half of the sandwich
Load up the sandwich with 1/4 avocado, 1 handful of arugula, 1/3 tomato, and a couple of slices of vegan mozzarella
