AIP Friendly Pesto Collard Wrap

Ingredients

  • 1 Large Collard Leaf
  • 1-2 Tbsp Pesto
  • 2-3 Slices Sugar-free Deli Slices
  • Optional: salsa (not AIP)
  • Optional: sautéed mushrooms
  • Optional: 21DSD coleslaw
  • Optional: shredded carrots

Aip pesto

  • 1 Large Bunch Basil
  • 4-6 Cloves Garlic
  • 1/2 tsp Sea Salt
  • 1/4 cup Olive Oil
  • Optional: 1/2 bunch cilantro
  • Optional: 1 Tbsp Nutritional Yeast

Preparation

  1. Trim stem off collard leaf and place flat on a cutting board or plate.

  2. Smear the pesto vertically down the center of the leaf.

  3. Place deli slices flat on the leaf, next to each other, slightly overlapping.

  4. Place any optional veggie toppings vertically in the center.

  5. Roll the collard leaf starting from the left or right side like you would a sushi roll.

  6. Secure with a few toothpicks and slice on the diagonal into 4 sections.

  7. Enjoy!

Aip pesto

  1. Pulse the dry ingredients together in a food processor or on low in a blender until the basil is finely chopped.

  2. Slowly stream in the olive oil until emulsified.

  3. Refrigerate for up to a week.
