Cheesecake

Ingredients

  • 200 gr pitted dates, soaked in warm water for 40’
  • 1 cup buckwheat flour
  • 1/2 cup cacao flour
  • FILLING
  • 150 gr. cashews soaked in warm water for 40’
  • 150 gr. coconut cream ( )
  • Vanilla essence
  • 2 tbsp stevia
  • 1/4 cup veggie milk
  • Raspberry jam*

Preparation

  1. Blend the dates+flour+cacao until it becomes a dough

  2. Spread the dough on the base of a round mould, keep it in the fridge until after next step

  3. In a food processor, blend the cashews, coconut cream, milk and stevia. It has to look thick

  4. Take out the mould out of the fridge and pour the cashew paste spreading it evenly

  5. Leave it in the freezer for 1 hour! After that, spread any *jam of your choice. Put back in the freezer for 2 hours and enjoy cold
