Hemp and Gogi Balance Bars

Ingredients

  • 100g finely grated zucchini
  • 150g finely grated carrot
  • 60ml honey/maple syrup/xylitol syrup
  • 15g nut butter (i used @ohmega_nutbutters choc almond)
  • 60ml almond milk
  • dry
  • 25g raw cacao powder
  • 25g desiccated coconut
  • 5g coconut flour
  • 20g ground flaxseeds
  • 30g raw hemp powder
  • 65g vegan protein (i used @phytopro chocolate)
  • 30g dried gogi berries (can sub cranberries)
  • crack of pink salt, 1/2 tsp cinnamon

Preparation

  1. Combine all the dry ingredients in a bowl

  2. Finely grate carrots and zucchini

  3. Add to dry mix

  4. Blend/combine remaining wet ingredients and add to dry mix

  5. You might need to use your hands to combine the mixture

  6. Add a dash more nut butter or syrup if it's too dry but not too much! press into a lined pan/dish

  7. Top with whatever you like

  8. I used crushed spelt flakes, coconut and raw choc

  9. Alternatively, roll into bliss balls

  10. Refrigerate for 4 hours

  11. Slice, eat and freeze the rest

  12. I just eat mine straight out the freezer and they're ??????
