Vegan Energy Bills

Ingredients

  • 300g dates without the inner stone
  • 200g walnuts
  • 40g almond butter
  • 5g chia seeds
  • pinch of salt
  • 1 teaspoon cinnamon (optional)
  • 2 tablespoons maple syrup
  • 40g coconut shreds or desiccated coconut

Preparation

  1. Super easy to make, you just need to put all the ingredients expect the coconut shreds into a high speed blender or food processor and blend until you get a good oily consistency! If you have the dough ready, simply form some bite sized balls and roll them on the desiccated coconut until the balls are completely covered! You can put it in the freezer for a few hours until eating it to get an even better texture! Also if the dates are too hard to blend, make sure to soak them in hot water for 30 minutes to soften up
