Grilled Peanut Coconut Satay Skewers

Ingredients

  • 2 blocks of firm tofu, drained, pressed & cut into 3/4 inch pieces
  • 1 can coconut milk
  • 1/4 cup peanut butter
  • 1 tbsp red curry paste
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 8-10 skewer sticks

Preparation

  1. Make sure tofu has been well pressed because you want these to absorb as much flavour as possible (i normally just wrap it up in a tea towel and place my rolling pin on top for a few hours)

  2. In a blender, mix together all other ingredients to combine well

  3. Reserve 1/2 cup of sauce for dipping

  4. Place tofu in a large bowl with sauce and leave to marinate for as long as you have time (over night if possible)

  5. Place on skewers and reserve remaining marinate for basting on grill

  6. Lightly grease grill, heat to medium and cook tofu for about 4-5 mins on each side basting often

  7. Serve with extra sauce for dipping
