7-Ingredient Gluten-Free Vegan Vanilla Pancakes

Ingredients

  • 200 ml gluten free oats
  • 200 ml rice flour
  • 1.5 tsp baking powder
  • 0.5 tsp vanilla extract or powder
  • 1 pinch of salt
  • 250 ml soy milk or other vegan milk
  • 2 tbsp agave or maple syrup

Preparation

  1. Mix all the dry ingredients in a bowl.

  2. Add the wet ingredients and whisk until combined.

  3. Fry each pancake in a little bit of oil on medium heat, using coconut oil for its high smoke point. Cook for about 2 minutes per side until the sides firm up and the surface is bubbly.
