7-Ingredient Gluten Free Vegan Vanilla Pancakes


  • 200 ml gluten free oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 200 ml rice flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1.5 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 0.5 tsp vanilla extract/powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 pinch of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 250 ml soy milk or other vegan milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp agave or maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀


  1. Mix all the dry ingredients in a bowl.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  2. Add the wet ingredients and whisk until combined.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  3. Fry each pancake in a little bit of oil on medium heat, I use coconut oil because it has the highest smoke point of all oils and thus can take high heat. It takes about 2 mins per side, you will see when the sides have got a litlbit firm and the surface is bubbly - that's the time to turn them! The batter makes 6-9 pancakes. I like to make them 10-12 cm in diameter.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  4. I served mine with a sliced banana, mixed berries, peanut butter, coconut flakes, quinoa puffs and cacao nibs. It's delicious to drizzle some agave or maple on top as well
