Carrot Cake Choc Chip Vegan Muffins

Ingredients

  • 1c grated carrot (~1.5medium carrots).
  • 2 flax eggs (2t ground flaxseed + 5t water).
  • 1/2c unsweetened apple sauce.
  • 1/3c coconut sugar .
  • 1/3c @traderjoes almond butter .
  • 1 tsp vanilla extract .

Preparation

  1. Once the flax egg has set, mix the top ingredients together in a medium bowl. *Use a medium sized grater for the carrot and press dry of excess liquid before adding to bowl

  2. Combine the dry ingredients in a separate bowl (hold off on the chocolate chips until the end)

  3. Stir the dry into the wet ingredients to create your batter

  4. Add the batter to your muffin tray and top with extra shredded carrots and chocolate chips

  5. Bake for 27-30min @ 350°F (Cool and enjoy!)
