Vegan & Healthy Double Chocolate Almond Cookies
Ingredients
- 75 grams of peanut butter
- 2 chia ‘eggs’ (mix 2 tbsp. of chia seeds with 5 tbsp. of water)
- 1 ripe banana, mashed
- 5 tbsp. oat flour
- 35 grams of cocoa powder
- 1 tsp baking powder
- a pinch of salt
- 1/2 tsp. vanilla extract
- 50 grams of almonds, chopped
Preparation
Preheat the oven to 180C
Mix the ingredients, except the chopped almonds, until all combined
Roll 10-12 balls with your hands and flatten it to a disk
Press one side into the chopped almonds and repeat
Bake the cookies for 15 minutes and let them cool for another couple of minutes before eating
