Vegan & Healthy Double Chocolate Almond Cookies

Ingredients

  • 75 grams of peanut butter
  • 2 chia ‘eggs’ (mix 2 tbsp. of chia seeds with 5 tbsp. of water)
  • 1 ripe banana, mashed
  • 5 tbsp. oat flour
  • 35 grams of cocoa powder
  • 1 tsp baking powder
  • a pinch of salt
  • 1/2 tsp. vanilla extract
  • 50 grams of almonds, chopped

Preparation

  1. Preheat the oven to 180C

  2. Mix the ingredients, except the chopped almonds, until all combined

  3. Roll 10-12 balls with your hands and flatten it to a disk

  4. Press one side into the chopped almonds and repeat

  5. Bake the cookies for 15 minutes and let them cool for another couple of minutes before eating
