Raw Caramel

Ingredients

  • 25 pitted medjool dates
  • 1 cup rice malt syrup (or maple syrup, but reduce slightly - try 3/4 cup because it's much sweeter)
  • 1/4 cup tahini (or any nut butter)
  • 1/4 cup peanut butter (or any nut butter)
  • 1/3 cup melted coconut oil
  • 1/4 tsp sea salt
  • 2 tbsp water

Preparation

  1. Soak the dates for 10-15 minutes in boiling water

  2. Peel off the skins (makes a smoother caramel), and place in a high powered blender or food processor along with all the other ingredients

  3. Blend until completely smooth

  4. Store in a jar in the fridge
