Banana Pancakes
Ingredients
- a squeeze of lemon juice
- 1 tsp baking powder (gf if required)
- 100ml any milk (i use soya)
Preparation
Chop banana and microwave for 1 minute until mushy (old spotty bananas are best and even better if you’ve got some from frozen as when microwaved they create a natural sweet juice)
Put everything into a bowl and mix until smooth
Drizzle some oil into a pan and fry pancakes on each side for a minute or so
Top however you like (i used peanut butter and strawberry jam)
