Quick and Easy Blueberry Muffin Baked Oats in a Mug

Ingredients

  • 5 tbsp (40-50g) porridge oats (blended or unblended)
  • 2 tbsp plain yogurt + 1 tbsp extra for serving
  • 1 egg OR 1 tbsp yogurt + 1 tsp baking powder + squeeze of lemon juice
  • 1 tsp sweetener/sugar or syrup
  • 1 tbsp blueberries

Preparation

  1. Put everything into a mug except for the blueberries and mix until foamy, ensuring all the oats are well combined from the bottom of the mug. If you have a blender, you can briefly blitz the oats to a powder for a more cake-like texture. Clean the rim of the mug.

  2. Stir in the blueberries.

  3. Microwave on high for 90 seconds or transfer the mixture into a lined oven-proof dish and bake in the oven for 15 minutes at 180C/350F/gas mark 4.

  4. Give the mug a shake, then tip the baked oats out onto a plate. Top with extra yogurt.
