Blender Banana Bread Bars

Ingredients

  • 1 tbsp almond butter
  • 1 ripe banana
  • 1 cup walnuts
  • 1 cup rolled oats
  • 1/2 tsp cinnamon
  • 1/3 cup chocolate chips
  • 7-8 dates pitted medjool dates
  • soaked in boiling water for 15 min

Preparation

  1. Preheat the oven to 350 degrees

  2. Line a small baking dish with parchment paper

  3. In a high speed blender, combine all ingredients except chocolate chips

  4. Blend on high until a thick and smooth batter is achieved, making sure that no clumps of dates remain

  5. Spread batter onto the baking dish

  6. Top (generously) with chocolate chips

  7. Bake for 18 min

  8. Until a toothpick inserted comes out clean

  9. Let cool for 10 min

  10. Before slicing into bars
