Cookie Dough Fudge Protein Brownie

Ingredients

  • 300g black beans
  • 100g maple syrup
  • 30g coconut oil
  • 30g cocoa powder
  • 60g smart whey
  • 13g truvia sweetener
  • 1.5tbsp vanilla extract
  • 1tsp baking powder
  • 0.25tsp salt
  • 20g milk chocolate chips
  • 15 mini cookies
  • 100g funfetti @gookiedough

Preparation

  1. Grease / line an 8

  2. Drain and thoroughly rinse the black beans and add to a food processor with the maple syrup, the coconut oil and the vanilla extract and blend until smooth

  3. Add in the baking powder, the salt, the truvia and the cocoa powder and blend until smooth

  4. Slowly add in the whey (easier if using a food processor) whilst blending

  5. Blend for a good 90-120s to get it as smooth as possible

  6. Add half of the mixture to the brownie tin and top with half of the cookie dough

  7. Add the other half of the brownie mix on top and top with the remaining cookie dough, the chocolate chips and the mini cookies

  8. Place in oven for 20-23minutes

  9. Allow to cool on a wire rack until room temperature then place in fridge overnight

  10. Cut into 10 bars and try not to eat them all!?
