Five-Ingredient Chocolate-Coated Cookies

Ingredients

  • 1 cup (150g) rice flour
  • 3/4 cup (90g) almond or flax meal
  • 1 tsp ground cinnamon
  • 1/3 tsp salt
  • 90mL pure maple syrup
  • 1/4 cup coconut oil

Preparation

  1. Preheat oven to 180 degrees C and line a cookie sheet with baking paper.

  2. Gently melt coconut oil and set aside to cool.

  3. Mix all dry ingredients in a large bowl until uniform. Pour in maple syrup and oil and combine.

  4. Use wet hands to roll in balls (1 Tbsp each in size) and place on cookie sheet. Use your hand to flatten a little, then bake for 12-15 mins. Cool for 5 mins before turning onto a wire rack. Serve with tea, or sandwich together with jam, peanut butter or drizzle with chocolate.
