Healthy Choco Prince

Ingredients

  • biscuits:
  • 150g almond flour @bobsredmill @earthfoodsme
  • 260g buckwheat flour @bobsredmill
  • a pinch of sea salt
  • 1 tsp baking powder
  • 125ml coconut oil ( melted) @earthsfinestme
  • 125ml maple syrup
  • 1 tsp organic vanilla extract
  • ganache filling:
  • 260ml coconut cream @earthsfinestme
  • 220g dark chocolate (85% cocoa) @lindtarabia
  • 1/2 tsp vanilla bean powder
  • 1 tbsp maple syrup

Preparation

  1. Biscuits:

  2. Preheat the oven to 325ºf

  3. Prepare two large baking sheets with parchment paper

  4. Combine all the ingredients to make the dough

  5. Make sure to mix the dry ingredients before adding the wet ones

  6. Keep mixing until the batter reaches dough-like consistency

  7. Dust a clean surface and roll the dough out

  8. Use a cookie cutter (4 cm) to form the cookie shape

  9. Reroll the remaining dough and repeat step 5 & 6

  10. Assemble the cookies on your baking tray with the help of a spatula

  11. Pop it in the oven to let it bake for 10-12 minutes or until they turn golden

  12. Chocolate ganache:

  13. Mix all the ingredients (except the chocolate) in a saucepan

  14. Heat it on a medium flame until it simmers

  15. Then start adding chunks of dark chocolate

  16. Keep stirring the ganache until the chocolate melts

  17. Make sure that the ganache reaches a silky smooth consistency

  18. Refrigerate the ganache for a few hours

  19. Once it sets you can spread it on top of the crispy biscuits

  20. Pro tip: save some coconut cream before adding the chocolate

  21. Use it later to stop the ganache from getting a cheese-like texture
