Healthy Choco Prince
Ingredients
- biscuits:
- 150g almond flour @bobsredmill @earthfoodsme
- 260g buckwheat flour @bobsredmill
- a pinch of sea salt
- 1 tsp baking powder
- 125ml coconut oil ( melted) @earthsfinestme
- 125ml maple syrup
- 1 tsp organic vanilla extract
- ganache filling:
- 260ml coconut cream @earthsfinestme
- 220g dark chocolate (85% cocoa) @lindtarabia
- 1/2 tsp vanilla bean powder
- 1 tbsp maple syrup
Preparation
Biscuits:
Preheat the oven to 325ºf
Prepare two large baking sheets with parchment paper
Combine all the ingredients to make the dough
Make sure to mix the dry ingredients before adding the wet ones
Keep mixing until the batter reaches dough-like consistency
Dust a clean surface and roll the dough out
Use a cookie cutter (4 cm) to form the cookie shape
Reroll the remaining dough and repeat step 5 & 6
Assemble the cookies on your baking tray with the help of a spatula
Pop it in the oven to let it bake for 10-12 minutes or until they turn golden
Chocolate ganache:
Mix all the ingredients (except the chocolate) in a saucepan
Heat it on a medium flame until it simmers
Then start adding chunks of dark chocolate
Keep stirring the ganache until the chocolate melts
Make sure that the ganache reaches a silky smooth consistency
Refrigerate the ganache for a few hours
Once it sets you can spread it on top of the crispy biscuits
Pro tip: save some coconut cream before adding the chocolate
Use it later to stop the ganache from getting a cheese-like texture
