Healthy Gluten Free & Vegan Banana, Blueberry & Chocolate Chip Buckwheat Breakfast Muffins

Ingredients

  • 1 cup buckwheat flour
  • 1tsp baking powder
  • 1/4tsp sea salt
  • 1tsp vanilla extract
  • 3-4 super ripe bananas (mashed)
  • 3tbsp coconut oil
  • 1 cup fresh or frozen blueberries
  • 1 tbsp flax w/ 4tbsp water mixed
  • 1tbsp apple cider vinegar

Preparation

  1. Preheat oven to 350 degrees

  2. In a small bowl mix your flax and water together and let sit for a few minutes

  3. In the meantime, in a large bow mix buckwheat flour, sea salt and baking powder

  4. Set aside

  5. In a different bowl mash your ripe bananas, add water, vanilla extract, apple cider vinegar, flax& water mixture, melted coconut oil, blueberries and chocolate chips mix everything well

  6. Slowly start adding your wet mixture into dry mixture and mix till everything is well incorporated

  7. Scoop your mixture into muffin tins

  8. Oil pan if you’re not using muffin linings

  9. Pop your muffin tray into your oven for 35 minutes

  10. Let muffins cool for 10 minutes before eating ?
