
Moroccan Chicken Breasts on Cauliflower Steak

Ingredients
- • Cut 1 cauliflower into 4 x 2cm thick steaks (bake the remaining florets for vegetable dippers/snacks)
- • Spray the steaks w/ oil & rub over fennel seeds and a little cumin + salt & pepper
- • Bake in preheated oven on 180 for 18mins
- • Prep and cook at same time as cauliflower
- • Rub the whole chicken breasts in olive oil
- • Drizzle over juice of 1 lemon
- • Rub with a generous mix of Moroccan dried spice mix (I use ) + salt and pepper
- • Bake in oven on 180 for about 18mins or until cooked through but still juicy
- • Serve chicken on cauliflower with a dollop of Greek yogurt and mint leaves
