Moroccan Chicken Breasts on Cauliflower Steak

Ingredients

  • • Cut 1 cauliflower into 4 x 2cm thick steaks (bake the remaining florets for vegetable dippers/snacks)
  • • Spray the steaks w/ oil & rub over fennel seeds and a little cumin + salt & pepper
  • • Bake in preheated oven on 180 for 18mins
  • • Prep and cook at same time as cauliflower
  • • Rub the whole chicken breasts in olive oil
  • • Drizzle over juice of 1 lemon
  • • Rub with a generous mix of Moroccan dried spice mix (I use ) + salt and pepper
  • • Bake in oven on 180 for about 18mins or until cooked through but still juicy
  • • Serve chicken on cauliflower with a dollop of Greek yogurt and mint leaves
