Pear Crumble
Ingredients
- 200g dried #dates (no seeds)
- 8 pears
- 1/2 cup oats
- 1 cup wholemeal flour
- 1/2 cup ground #flaxseed
- 1 tspn mixed spice
- 1 pinch of salt
- 1/2 cup brown sugar
- 1/2 cup #nuttlex margarine
- 1/4 cup #chiaseeds
- 2 sheets #shortcrust pastry
Preparation
Add dates and one cup of water to a medium size saucepan, bring to the boil then reduce the heat
Peel and roughly chop pears directly into the saucepan with the simmering dates
Add one heaped tspn of mixed spice
Add one tbsp brown sugar (optional)
Stir and simmer for ten minutes
In a mixing bowl combine; oats, flour, ground flaxseed, mixed spice, salt, brown sugar, nuttlex and chia seeds, and mix with hands to form a dry crumble dough
Grease a springform cake pan (approx 23cm diameter)
Line cake pan with #pastry and bake for five minutes
Take out of oven and add a layer of the pear date mixture
Top with crumble mixture and bake in oven for twenty to thirty mins on 190/200 celsius
