Plant Based Spaghetti Squarsh

Ingredients

  • Squash
  • Sauce
  • 1/2 white onion
  • 4cloves minced garlic
  • small amount of coconut or olive oil (or water for fat free)
  • 1/2 red bell pepper diced
  • 6 small diced tomatoes
  • lots of oregano/Italian spices
  • 1 tsp sea salt
  • pepper
  • fresh basil
  • honey

Preparation

  1. Squash--- cut in half lengthwise {this isn't always an easy task

  2. You can also bake it and cut it afterwards} and place face down on cookie sheet or in Pyrex with a small amount of water in pan

  3. Bake at 350° for 35 minutes

  4. Sauté 1/2 white onion with 4cloves minced garlic with small amount of coconut or olive oil (or water for fat free)

  5. Add---1/2 red bell pepper diced, 6 small diced tomatoes, lots of oregano/Italian spices, 1 tsp sea salt, pepper, one decent handful of fresh basil ribboned thinly, and one tsp honey (optional)

  6. Simmer until squash is ready

  7. Shred the squash with a fork, top with sauce, and enjoy
