Plant Based Spaghetti Squarsh
Ingredients
- Squash
- Sauce
- 1/2 white onion
- 4cloves minced garlic
- small amount of coconut or olive oil (or water for fat free)
- 1/2 red bell pepper diced
- 6 small diced tomatoes
- lots of oregano/Italian spices
- 1 tsp sea salt
- pepper
- fresh basil
- honey
Preparation
Squash--- cut in half lengthwise {this isn't always an easy task
You can also bake it and cut it afterwards} and place face down on cookie sheet or in Pyrex with a small amount of water in pan
Bake at 350° for 35 minutes
Sauté 1/2 white onion with 4cloves minced garlic with small amount of coconut or olive oil (or water for fat free)
Add---1/2 red bell pepper diced, 6 small diced tomatoes, lots of oregano/Italian spices, 1 tsp sea salt, pepper, one decent handful of fresh basil ribboned thinly, and one tsp honey (optional)
Simmer until squash is ready
Shred the squash with a fork, top with sauce, and enjoy
