Plantain Bread

Ingredients

  • 3 over ripe plantains
  • 2 eggs
  • 1/2 unsweetened plain yogurt
  • 3/4 cup oil
  • 1 cup each of white and whole wheat flour
  • 1/2 sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 cup sunflower seeds
  • 1/2 cup rolled oats
  • 1/3 cup unsweetened shredded coconut. Mix everything together and bake for 50-65 mins in 350F oven until the skewer inserted comes out clean. The sweetness level is just right for us but some may find it not sweet enough so adjust the sugar accordingly
