Protein Pumpkin Cookies

Ingredients

  • 90 grams pumpkin pure (can use sweet potato pure or apple sauce) but you cannot taste the pumpkin!⁣
  • 50 grams egg whites⁣
  • 4 grams sf pudding mix (sweetens & thickens the batter)⁣
  • 26 grams @1stphorm level-1 protein (this is just unbelievable + perf for baking)⁣
  • droplets of liquid vanilla stevia or stevia/sweetener packet⁣
  • 2 tsp baking powder⁣
  • if wanting more oreo like: i add 5 grams of @hiitnutrition black cocoa ⁣

Preparation

  1. The mixture should be thick like pancake batter but not too runny!⁣

  2. Let sit for 5-10 min to thicken, while oven preheats, line a baking sheet with parchment paper & spray with coconut oil spray⁣

  3. TIP: if you spray the pan before adding the paper, it helps it stick down & stay in place⁣

  4. Use a spoon or even better a WATERMELON scooper to make 6 perfect, round, cookies⁣

  5. Bake @ 350 for 11-12 minutes & let cool completely before storing in the fridge ~~ GREAT to meal prep, make in a big batch (double or triple recipe) & enjoy even on vaca/ traveling! Top with nut butter for the BEST results
