Pumpkin Bread

Ingredients

  • 2 tbsp ghee butter
  • 1 tsp vanilla paste or extract
  • 1/2 tin pumpkin purée
  • 2 tsp pumpkin spice
  • 1 tsp baking powder
  • 1/2 cup ground almonds
  • 1/2 coconut flour

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a 1lb loaf tin with baking paper. Mix all the wet ingredients in a bowl. Add the spice, baking powder and ground almonds. Mix well then add the coconut flour. Add the mix to the prepared tin and bake for 30 mins until knife comes out clean

  2. For the icing: Mix cream cheese with 1 tsp vanilla paste. (I use @nushfoods ). Allow the bread to cool completely before icing. Optional* sprinkle with flaked almonds and pumpkin seeds
