Pumpkin & Chocolate Chip Banana Bread

Ingredients

  • 3 small or 2 large ripe bananas
  • 1 large egg (mine are at room temp)
  • 2/3 cup of pumpkin purée
  • 1 & 1/2 cup of plain flour
  • 25g of butter melted and then cooled
  • 1/3 cup of brown sugar (I used a mixture of light and dark)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 100g of chocolate chips (I used half dark, half milk)
  • 2 tbsp of pumpkin pie spice

Preparation

  1. First I preheated the oven to 180 degrees and then made the wet mixture. First mash the bananas and then add the egg and mix until combined! Mix in butter, vanilla, pumpkin and brown sugar until smooth. Now to make the dry mix! In a separate bowl, mix together flour, salt, pumpkin pie spice mix, baking soda and baking powder. Combine both of the dry and the wet mixtures. Finally fold in the chocolate chips and pour the mixture into a bread tin that I lined - use butter or spray oil if you don’t have any liners

  2. Bake for 45-55 minutes or until a toothpick comes out clean - make sure you let it cool before enjoying
