Pumpkin Cookies

Ingredients

  • 1 1/2 cups all purpose flour {i used @bobsredmill gluten free 1:1 baking flour}
  • 1/2 cup granulated sugar {i used coconut sugar}
  • 1 tbsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 cup pumpkin purée
  • 1/4 cup milk {i used macadamia nut milk}
  • 1 egg
  • chocolate chips

Preparation

  1. Preheat oven to 350f & spray/line a baking sheet

  2. In a large mixing bowl, whisk together the flour, sugar, cinnamon, and baking powder

  3. In a small mixing bowl, whisk together the pumpkin purée, milk, and egg

  4. Pour the wet ingredients into the dry and stir until well combined

  5. Use a cookie scoop to make 18 cookies, slightly flatten them {i used a mug with a little oil on the bottom}, and bake for 6-8 minutes!
