Pumpkin Cookies
Ingredients
- 1 1/2 cups all purpose flour {i used @bobsredmill gluten free 1:1 baking flour}
- 1/2 cup granulated sugar {i used coconut sugar}
- 1 tbsp. cinnamon
- 1 tsp. baking powder
- 1/2 cup pumpkin purée
- 1/4 cup milk {i used macadamia nut milk}
- 1 egg
- chocolate chips
Preparation
Preheat oven to 350f & spray/line a baking sheet
In a large mixing bowl, whisk together the flour, sugar, cinnamon, and baking powder
In a small mixing bowl, whisk together the pumpkin purée, milk, and egg
Pour the wet ingredients into the dry and stir until well combined
Use a cookie scoop to make 18 cookies, slightly flatten them {i used a mug with a little oil on the bottom}, and bake for 6-8 minutes!
