Roasted Cauliflower &Tahini

Ingredients

  • 1 head cauliflower
  • cut in small florets
  • 3 tbsp of tahini
  • 3 tbsp of yogurt
  • 1/3 cup water
  • 1 lemon
  • sea salt
  • cumin

Preparation

  1. Preheat the oven at 400 degrees

  2. In a large bowl combine cauliflower florets,2 tbsp olive oil, 1 tsp cumin, sea salt

  3. Place on sheet pan and bake for 45 minutes or until cauliflower are crispy

  4. In the meantime prepare the sauce: combine tahini, yogurt, water, lemon and sea salt and whisk until cream

  5. To serve in a large plate add in tahini sauce and place the cauliflower on top of the sauce and garnish with parsley
