Roasted Veggie Sandwich

Ingredients

  • 1 Red Bell Pepper, sliced
  • 1 Zucchini, sliced
  • 1/2 Onion, sliced
  • 1 Eggplant, sliced
  • 2 tsp Olive Oil, optional
  • 1 tsp Garlic Powder
  • Salt and Black Pepper to taste
  • Lettuce (recommend romaine or butter lettuce)
  • Tomato, sliced
  • Sprouts
  • Hummus
  • Pesto
  • Mustard, optional
  • Bread

Preparation

  1. Preheat oven to 425 degree f + prepare baking pan wi/ silicone baking mat, aluminum foil, or oil

  2. Prep, wash, + slice vegetables

  3. In a large bowl, combine bell pepper, zucchini, onion, eggplant

  4. Coat with olive oil

  5. Mix in garlic powder, salt, and black pepper

  6. Spread vegetables evenly on baking pan

  7. Bake for 30-35 mins until vegetables are

  8. Browned and tender

  9. Start assembling the sandwich with two slices of bread, spread hummus on one side and pesto on the other

  10. Start to layer sandwich with lettuce, tomato, roasted vegetables, then sprouts
