Soft Wild Garlic Knots
Ingredients
- 3 1/2 cup (420g) spelt flour or white flour
- 1 tbsp sugar
- 21g fresh yeast
- 1/3 cup (80g) vegan butter
- 1 cup dairy-free milk
- 2 tsp salt
- 1 tsp garlic powder
- 30g fresh garlic, finely sliced
- Soy cream, olive oil and turmeric to brush
Preparation
Heat the milk wih the sugar in a pan
Mix the yeast with lukewarm milk-sugar mixture (let it cool down or you’ll kill the yeast) set aside to activate
When frothy, put it in the bowl of a stand mixer fitted with a hook attachment together with the flour, vegan butter,salt, garlic powder and wild garlic
Knead for 5 minutes
Let it rise for 1 hour or until it doubles in size
Make 16 knots and let rise covered for another 30 minutes. Brush with a mixture of 4 tbsp soy cream, 2 tbsp olive oil and little turmeric. Bake in a pre-heated oven at 180°C – 350°F for 16-20 minutes or until golden brown
