Soft Wild Garlic Knots

Ingredients

  • 3 1/2 cup (420g) spelt flour or white flour
  • 1 tbsp sugar
  • 21g fresh yeast
  • 1/3 cup (80g) vegan butter
  • 1 cup dairy-free milk
  • 2 tsp salt
  • 1 tsp garlic powder
  • 30g fresh garlic, finely sliced
  • Soy cream, olive oil and turmeric to brush

Preparation

  1. Heat the milk wih the sugar in a pan

  2. Mix the yeast with lukewarm milk-sugar mixture (let it cool down or you’ll kill the yeast) set aside to activate

  3. When frothy, put it in the bowl of a stand mixer fitted with a hook attachment together with the flour, vegan butter,salt, garlic powder and wild garlic

  4. Knead for 5 minutes

  5. Let it rise for 1 hour or until it doubles in size

  6. Make 16 knots and let rise covered for another 30 minutes. Brush with a mixture of 4 tbsp soy cream, 2 tbsp olive oil and little turmeric. Bake in a pre-heated oven at 180°C – 350°F for 16-20 minutes or until golden brown
