Spaghetti and Chickpea Zucchini Meatballs

Ingredients

  • 1can chickpeas drained and rinsed
  • 3 cloves garlic
  • 1/2c rolled oats
  • 1tsp dried basil
  • 1tsp dried oregano
  • 1/2tsp salt
  • 2tbsp nooch (nutritional yeast)
  • juice of 1/2 lemon
  • 1c shedded zucchini

Preparation

  1. Pulse oats, garlic and chickpeas together

  2. Mix everything else in bowl

  3. Form balls (I made 10)

  4. Preheat oven to 375–convection if you have

  5. Bake for 25 min turning once half way

  6. I baked for 5more minutes and then let rest

  7. Magic in a bowl
