These Peanut Butter Cookies

Ingredients

  • 1/2 c peanut butter
  • 1/4 c maple syrup
  • 3 tbsp dairy free milk
  • 1 tsp miso paste (or 1/2 tsp salt)
  • 1/4 c coconut flour
  • 1 tbsp tapioca starch
  • optional: a tad bit of vanilla

Preparation

  1. Preheat oven to 180c

  2. Mix all wet ingredients + peanut butter in a bowl

  3. Once incorporated, mix in the coconut flour and tapioca starch

  4. It'll look dry at first

  5. Dont be tempted to add more flour, keep mixing- i promise it will come together! once it becomes rollable, roll 10-12 tablespoon size pieces into a ball and place them on a lined baking tray

  6. Then using a back of a fork make some hatch marks by pressing down on them

  7. Place them into the oven for 12-14 minutes or until they look slightly crisp on the edges

  8. Let them cool completely and then dip them into some melted chocolate!
