These Peanut Butter Cookies
Ingredients
- 1/2 c peanut butter
- 1/4 c maple syrup
- 3 tbsp dairy free milk
- 1 tsp miso paste (or 1/2 tsp salt)
- 1/4 c coconut flour
- 1 tbsp tapioca starch
- optional: a tad bit of vanilla
Preparation
Preheat oven to 180c
Mix all wet ingredients + peanut butter in a bowl
Once incorporated, mix in the coconut flour and tapioca starch
It'll look dry at first
Dont be tempted to add more flour, keep mixing- i promise it will come together! once it becomes rollable, roll 10-12 tablespoon size pieces into a ball and place them on a lined baking tray
Then using a back of a fork make some hatch marks by pressing down on them
Place them into the oven for 12-14 minutes or until they look slightly crisp on the edges
Let them cool completely and then dip them into some melted chocolate!
