Triple Berry Skillet Pie

Ingredients

  • pie crust of choice (I used a pre-made crust by @pillsbury but you could make your own!), 6 cups frozen berry medley (I used @wymansfruit blueberries, raspberries, blackberries), 1 lemon, 3 tbsp arrowroot flour (or cornstarch), 1/4 tsp cinnamon, 1 egg (or milk of choice) ⁣

Preparation

  1. In a saucepan, simmer the frozen berries, lemon juice and cinnamon, (you could add 1/2 - 1 cup sugar, if desired!); after a few minutes scoop out some of the juice and mix with arrowroot flour, then add back into the saucepan and stir frequently until mixture thickens; let sit for 5-10 minutes; grease a skillet, evenly spread the pie crust on the bottom/sides, add filling in slowly; fold the sides over slightly & brush the crust with egg; bake @ 375 degrees for 45-50 minutes; let cool & top with ice cream
