Turkey Meatloaf Mini Bites

Ingredients

  • 1 pound organic lean turkey meat
  • 1 egg
  • 1 cup whole oats or 3/4 cup gluten-free bread crumbs
  • 1 cup spinach
  • Handful of veggies, like carrots, celery, onion
  • Pinch of minced garlic
  • 3 tablespoon of ketchup, reserving 1 tablespoon for a topping
  • 1 tablespoon of low sodium soy sauce, Worcestershire sauce or Bragg’s Amino Acid (for a GF option)
  • Salt and pepper to taste, with optional seasonings like dry mustard, parsley, or oregano
  • Organic canola/olive oil spray

Preparation

  1. Preheat oven to 350

  2. Add spinach and whatever veggies you have on hand to a food processor. Finely chop

  3. Add veggies to a bowl with turkey and egg

  4. Add 1 cup of oats to the food processor, chop, and add to the bowl

  5. Season with garlic, ketchup, and soy sauce or Worcestershire, salt/pepper and other seasonings if using

  6. Stir all together with a large spoon or spatula to thoroughly combine ingredients

  7. Spray mini muffin tins with nonstick spray

  8. Fill cups to the top with meat mixture and flatten the surface with back of the spoon

  9. Add a drop of ketchup to the top of each mini muffin tin and smooth with the back of the spoon

  10. Bake for about 20 - 25 minutes

  11. Let sit for a few minutes and transfer turkey muffins to a plate
