Vegan Gluten-Free Lemon Bread
Ingredients
- 2 cups gf all purpose flour;
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1/4 tsp baking soda
- 1 cup coconut sugar;
- 1/2 cup vegan milk (warm);
- 1/2 cup coconut milk;
- 1/4 cup grape seed oil;
- 1/2 cup lemon juice
- zest of lemon;
- lemon icing:
- 3 tbsp melted coconut butter;
- 3 tbsp tahine;
- 1 1/2 tbsp powdered xylitol (natural zero calories sweetener);
- 2 1/2 tbsp lemon juice;
- zest of lemon for topping; .
- pinch turmeric;
- 1 tsp matcha; .
Preparation
In a large bowl, combine all dry ingredients
Whisk liquid ingredients in a separate bowl, combine wet and dry, then stir until just evenly mixed
Spread into a grease loaf pan
Bake 50-55 minutes at 350 F or until loaf has risen and a toothpick inserted into the center comes out clean
