Vegan Pancake Mini-Muffins

Ingredients

  • 2t @bobsredmill ground flaxseed meal.
  • 1/2 zucchini (grated) .
  • 2/3c @bobsredmill buckwheat flour .
  • 1t coconut flour .
  • 1/2tsp cinnamon .
  • 1/2tsp baking powder
  • 1c of almond milk.

Preparation

  1. Mash your banana first in the bottom of your bowl then add ground flaxseed meal with a tablespoon of water to sit and thicken while you grate the zucchini. Add all remaining ingredients above, place in a muffin tray with vegan chocolate chips + bluebs and bake for 20min @ 350°F

  2. Topped with my fave traderjoes raw creamy almond butter and maple syrup
