Sweet Potato Breakfast Nachos
Ingredients
- breakfast details ?? (this makes two servings for us!) Take two medium-large sweet potatoes
- slice into rounds
- coat with 1 tsp oil (I use olive or avocado)
- preheat oven to 450F
- bake for 20-25 minutes depending on how thick you slice them. Topped with 2 eggs poached in my egg poacher pan
- 1/2 avocado (actually added on the other half when we shared these!)
- jalapeños
- onions
- tomatoes
