Sweet Potato Breakfast Nachos

Ingredients

  • breakfast details ?? (this makes two servings for us!) Take two medium-large sweet potatoes
  • slice into rounds
  • coat with 1 tsp oil (I use olive or avocado)
  • preheat oven to 450F
  • bake for 20-25 minutes depending on how thick you slice them. Topped with 2 eggs poached in my egg poacher pan
  • 1/2 avocado (actually added on the other half when we shared these!)
  • jalapeños
  • onions
  • tomatoes
