Vanilla Banana Pancakes

Ingredients

  • All you need truly is 2 eggs + 1 banana. You can make the pancakes with that alone but I like to add in a little flavor and baking powder to help them rise a little bit. I added some @ancientnutrition vanilla collagen, cinnamon, and baking powder. I like adding a little protein to keep me full longer. Topped with some caramelized bananas because I can’t get enough of those recently ? Happy Sunday!! -

  • In a bowl whisk 2 eggs, mash 1 banana (leave it a little chunky so the pancakes hold together better), 1 tbsp @ancientnutrition vanilla collagen, 1 tsp cinnamon, 1/2 tsp baking powder. Mix together. Add a little coconut oil to your pan and spoon out pancake batter. Cook for 2-3 minutes on each side. Makes about 9-10 mini pancakes. Topped with 1/2 a banana sautéed in the leftover coconut oil + cinnamon. Also added a little maple syrup. #glutenfreerecipes #choosingbalance #paleo
