Vegan Paleo Peppermint Bark Bars

Ingredients

  • 1 1/4 cup almond flour
  • 3 tbsp avocado oil (Chosen Foods)
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 3/4 cup chocolate chunks (Enjoy Life Foods)
  • 1 tsp coconut oil
  • Crushed candy cane
  • Sea salt

Preparation

  1. Combine almond flour, avocado oil, maple syrup, and vanilla in a mixing bowl.

  2. Spread the dough evenly onto a lined 9x9 baking sheet.

  3. Bake at 350°F (175°C) for 15 minutes, ensuring even flattening.

  4. Allow the baked shortbread to cool.

  5. Melt chocolate chunks and coconut oil together.

  6. Pour the melted chocolate over the cooled shortbread layer.

  7. Sprinkle crushed candy cane and sea salt over the melted chocolate.

  8. Freeze the bars for 1 hour.

  9. After freezing, cut the bars into pieces.
