Our Cauliflower Fried Rice

Ingredients

  • 1 tbs of sesame oil
  • 1 clove of minced garlic
  • 1/2 cup of julian peeled carrots
  • 1/2 cup of edamame beans
  • 1 cup of mushrooms
  • 2 cups of cauliflower rice
  • 3/4 tsp of chili powder
  • 1/2 tsp of garlic powder
  • 7 tsp of soy sauce
  • 1/4 tsp of pepper
  • 1/2 cup of bean sprouts
  • handful of sliced green onion
  • sesame seeds

Preparation

  1. In a cast iron pan on medium heat add sesame oil and garlic

  2. Stir until fragrant and add carrots and beans

  3. Stir veggies for 2 minutes and add mushrooms

  4. Lower heat to medium-low and allow to cook for 5 minutes

  5. Once time is up add cauliflower rice and seasonings

  6. Stir until all components are well combined

  7. Remove pan from heat and top with bean sprouts, green onion, and sesame seeds

  8. Serve and enjoy ???? #threebunnies
