Peanut Butter Cup Cookies with Flaky Salt B

Ingredients

  • 1 1/4 cup almond flour
  • 3 tbsp coconut flour
  • 1/3 cup creamy or crunchy peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp baking soda
  • 2 flax eggs
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 10 peanut butter cups

Preparation

  1. Preheat oven to 350 degrees

  2. Cream together peanut butter, 2 flax eggs, melted and cooled coconut oil, maple syrup, and vanilla extract

  3. In a separate bowl, whisk together almond flour, coconut flour, salt, and baking soda

  4. Combine wet and dry ingredients

  5. Now, fold in your favorite peanut butter cups - crush/break them up slightly when you add them in

  6. Form dough into 2-3 inch size amounts and place on parchment lined cookie sheet

  7. Bake for 15 minutes until peanut butter cups are melty

  8. Sprinkle with flaky salt if you wanna feel fancy

  9. Makes about 10-12 cookies
