Spiralized Beet Salad
Ingredients
- 340 g spiralized beet noodles ~4 C or 2 medium beets
- 1 19- oz can lentils drained and rinsed
- 1 large green or yellow apple thinly sliced
- 1/2 C pumpkin seeds
- ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Lime vinaigrette
- Juice of 2 small limes ~2 1/2 tbsp
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1/2 tbsp Dijon mustard
- 1/4 tsp salt
- Black pepper to taste
Preparation
