15 Minute Stir Fry

Ingredients

  • 1 tsp coconut oil ⠀
  • 1 tsp ginger paste⠀
  • 1 tsp lemongrass paste (optional)⠀
  • 200g firm tofu ⠀
  • 80g mushrooms, chunky chopped
  • handful of broccoli
  • handful of cherry toms

Preparation

  1. Add the oil, ginger and lemongrass to the pan, fry off your tofu, mushrooms and broccoli for a few mins

  2. Then add the following + cherry toms: 1 tbsp soy sauce, 2 tsp rice vinegar (or apple), 1 tbsp agave nectar (or maple/golden), 1/2 tsp cinnamon, salt and pepper, 1 portion of pre-cooked rice

  3. Stir fry for 5-8 mins then finally add your rice for the last few minutes. Serve, and sprinkle with fresh coriander and chia seeds (optional)
