Afelia's Desi Hash
Ingredients
- 2 large potatoes, finely diced
- 4 - 6 eggs
- 3 tbsp oil
- 1 onion
- 1 tsp salt
- 1 tsp dried fenugreek leaves
- 1 tsp mixed curry powder
- a pinch of panch phoron (Indian 5 spice)_
- 3 green chillies, finely sliced
- chopped fresh coriander
Preparation
Start by finely dicing 2 potatoes and 1 onion
Heat oil in a non stick frying pan and add the diced onion, wait till the onion browns slightly then add 1 tsp salt. Once the onions look soft add 1 tsp dried fenugreek leaves, 1 tsp mixed curry powder and a pinch of panch phoron (Indian 5 spice). Saute for a few minutes before adding the finely diced potatoes. Mix the potatoes, cover and cook on a low heat for 10 minutes until soft
Push the potatoes to one side in the pan and then crack in the eggs, allow the eggs to cook through a little and then scramble. Once the eggs are solid, mix with the potatoes and add the sliced green chillies and coriander
Serve with parathas and Greek yoghurt or on toast for a yummylicious start to your day, a quick lunch fix or even teatime
