Vegan Apple Pancakes with Avocado

Ingredients

  • half of soft ripe avocado
  • about 2 tbsp of dessicated coconut
  • 90g of no sugar apple puree
  • about 1-2 tsp of coconut flour
  • soya flour
  • unsweetened soya milk

Preparation

  1. Mix the ingredients until the texture is like a soft dough.

  2. Form small balls from the dough.

  3. Flatten each ball on a frying pan.

  4. Fry the pancakes using coconut oil.

  5. Note that the pancakes may be soft and fragile due to the coconut flour.
