Avocado Mac and Cheese

Ingredients

  • 1 portion pasta
  • 1 avocado
  • 1-2 tbsp nutritional yeast
  • plant mylk (less than 1/4 cup)
  • (optional, but recommended) vegan cream cheese eg tofutti/nush but any will do
  • garlic powder
  • salt & pepper
  • heirloom tomato
  • frozen peas
  • cashew parmesan (recipe a few posts back)
  • chilli flakes

Preparation

  1. Serves 1, but easily doubles

  2. Place 1/2 the avocado in a blender or food processor along with a splash of mylk, the nutritional yeast, garlic powder, vegan cream cheese, salt & pepper until smooth

  3. Cook the pasta to package instructions, at the last minute add in the frozen peas and drain once the water boils again

  4. Heat the avocado sauce up on the hob and once the pasta and peas are cooked add them to the sauce and stir together

  5. Stir in the chopped tomato

  6. Serve up with the rest of the avocado, chilli flakes and cashew parmesan
