Baked Dill Pickle Chips

Ingredients

  • 5 russet potatoes, super thinly sliced
  • 1 tbsp fresh dill, finely chopped
  • 2 tbsp brine from a jar of dill pickles or white vinegar
  • 1 tbsp olive or avocado oil
  • 1/4 tsp garlic powder
  • a big pinch of salt

Preparation

  1. Toss potato slices with all other ingredients, let marinate for 20 mins and arrange on a parchment lined baking sheet

  2. Bake in preheated oven for 20-25 mins at 375 degrees F until edges start to brown

  3. Sprinkle a little more salt if desired
