Balanced & Crave-Worthy Snack Recipes

Ingredients

  • 1 cup pitted medjool dates (approx. 9 dates)
  • 9 tsp peanut butter
  • 9 almonds
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil
  • One 15 oz. can chickpeas, rinsed and drained
  • 1 avocado
  • 2 Tbsp vegan mayo
  • 1 tsp rice vinegar
  • 1 tsp nutritional yeast
  • 1/2 tsp flaky sea salt
  • Pinch of black pepper
  • Juice of 1/2 lime
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 2 Tbsp chopped fresh parsley
  • 2-3 slices sourdough bread

Preparation

  1. Melt chocolate with coconut oil.

  2. Make a slit on the surface of the date and stuff with 1 tsp peanut butter and 1 almond.

  3. Repeat the remaining dates.

  4. Coat in melted chocolate and transfer to a wire rack with a baking sheet underneath.

  5. Freeze for 10 minutes to set.

  6. Mash chickpeas and avocado.

  7. Stir in the remaining ingredients, adjusting salt and pepper as needed.

  8. Top on toasted sourdough and garnish with red pepper flakes and flaky salt.
