Banana Coffee Baked Oats

Ingredients

  • 1/2 cup porridge oats or oat flour 🥣 (oat flour gives a thicker consistency)
  • 1 scoop of protein powder 💪🏼 (any cookie/vanilla/coffee flavor works)
  • 1 tbsp flax seed meal
  • 1/2 tsp baking powder
  • 1/2 banana, mashed 🍌
  • 1/4 cup brewed coffee ☕️
  • 1/4 cup milk 🍼 + 1/4 cup water 💦 (extra for thinner consistency)
  • A few pecans for decoration

Preparation

  1. Preheat oven to 180°C (356°F).

  2. In a bowl, mix together porridge oats or oat flour, protein powder, flax seed meal, and baking powder.

  3. Add mashed banana, brewed coffee, milk, and water. Mix well.

  4. Transfer the mixture to an oven-safe single-serve dish.

  5. Bake in the preheated oven for 20 minutes, or longer for a cake-like consistency.

  6. Once baked, let it cool slightly.

  7. Top with a mixture of soy yogurt, peanut butter, coffee granules, and vanilla flavor drops.

  8. Serve and enjoy!
