Ingredients

  • wet:
  • 4 bananas, mashed
  • 200 g plain soy yoghurt
  • 1 tbsp apple vinegar
  • 1tsp vanilla essence
  • dry:
  • 190 g wholemeal flour
  • 80 g plain flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • pinch of salt

Preparation

  1. Preheat the oven to 190 °C

  2. Prepare 900g/2lb bread baking tin

  3. Mix all the wet ingredients in a bowl, add all the dry ingredients and mix well together, so there's no lumps

  4. Pour the batter (which will be very thick, yoghurt like consistency) into the tin, level the top and bake for 50 mins, until the skewer stuck inside the bread comes out clean

  5. Take out of the oven and leave in the tin for about 10-15 mins

  6. After that, take out and let cool completely on a wire rack
